Brown Butter S’mores Cookies

your gonna need a nap after this one

Ingredients 

Ingredients

  • 2 sticks of unsalted butter 

  • 2 tablespoons milk 

  • 1 cup packed dark brown sugar 

  • 1/2 cup granulated sugar 

  • 2 cups all-purpose flour 

  • 2 teaspoons salt 

  • 1 teaspoon baking soda 

  • 2 large eggs cold from the refrigerator 

  • 1 tablespoon vanilla extract

  • 1 bar of chocolate (5-7 ounces) 

  • 5-10 ounces milk chocolate chips 

    For assembly:

  • Graham Crackers

  • Big Marshmallows 

Baking Method

  1. Get your butter in a pan and brown the butter. This takes 5 to 10 minutes. Observe it, when the foam subsides on top of the bottom and you smell a slight toast smell and little brown flakes at the bottom you can pull it off.

  2. Pour the brown butter into a bowl with another bowl full of ice below so it can get cold. A metal works better to pour the butter in because it gets cold faster. Add 2 tablespoons of ice-cold milk and whisk till it is a lovely creamy texture.

  3. Add your sugars and mix till thoroughly combined

  4. Add eggs one at a time and whisk till thoroughly combined. Then you can add your vanilla extract.

  5. Add all dry ingredients and fold them together.

  6. Get half your chocolate bar and cut it into pieces and dump it into the cookie dough. Then add half of the chocolate chips in and fold together till combined. You could bake now with out the smores hubbub but keep reading if you’d like.

  7. Set graham crackers, chocolate, and marshmallow on a baking sheet and drape the cookie dough on the graham crackers. It might be a little difficult so have a bowl of water next to you to make your hands less sticky when dealing with the dough.

  8. Rest for at least 20 minutes in the fridge or up to 2 days because you need to have the dough chilled or else it will expand to much in the oven.

  9. Bake in the Oven at 350 F for 18-20 minutes. Let rest for about 5 minutes and you're free to enjoy your labor of love.
