Spicy & Crispy Tofu Noodles (Vegan)

Ingredients

  • 16 oz firm tofu block

  • 1 tbsp of cornstarch

  • 1 jalapeno or Korean chili

  • 1 head of garlic, minced

  • 1/2 red onion

  • 1 scallion

  • A handful of dried red chilis (optional)

  • 16 oz of any noodle of your choice, or can just serve with white rice

    For the SAUCE

  • 3 tbsp Soy Sauce

  • 2 tbsp Sugar

  • 1/2 tbsp sesame oil

  • 2 tbsp of Hoisin Sauce

  • 1 tbsp of sambal (siracha if you do not have any)

  • 1 tbsp MSG

  • 1 tbsp cornstarch

Method

  1. Get your tofu block and drain it. Then if you have time put the tofu on a plate with a paper towel underneath and on top of it and put something heavy on the tofu to drain out all the water. I did this for an hour

  2. After tofu is mostly dry, cut it into bite-size pieces and place it in a bowl. Add 1 tbsp of cornstarch and mix with tofu till evenly dispersed.

  3. I air-fried the tofu for about 10-15 minutes, but if you do not have one you can pan fry it till golden brown. Set aside

  4. Combine all the sauce ingredients and mix very thoroughly to get the cornstarch incorporated. Then cut your scallions, garlic, onion, and pepper. Once cut sautee them in a pan with some oil.

  5. Once vegetables are cooked through, add your sauce and cook till it has reduced and it is thick. Usually about 1-3 minutes.

  6. Add the noodles of your choice and mix the sauce with the noodles till combined nicely.

  7. Add your tofu and mix carefully to make sure they do not get too soggy. Add some more green onions for garnish. Try not to get hooked!
