Comforting Croissant Bread Pudding

Ingredients

  • 8 egg yolks

  • 10-14 baked croissants (store-bought is a-okay)

  • 3 tsp group cinnamon

  • 1 ¼  cup brown sugar

  • 1 tsp salt

  • 1 tbsp vanilla extract

  • 2 cups whole milk

  • ½ cup of unsalted butter

  • Powdered sugar (optional, but makes the food Instagram worthy)

  • Fresh Fruit

  • 3 tbsp sugar

  • Heavy Cream or store-bought whipped cream (homemade is so much better it’s not even funny)

Method:

  1. Butter a baking pan liberally, then get a saucepot and add your butter and melt it. Once slightly bubbling add your 1 cup of brown sugar and whisk till combined. Simmer till it's slightly bubbling. Take off heat and spread it on the bottom of the baking pan. This will be a great little Carmel on the bottom of the bread pudding.

  2. Now the custard. In a bowl, add your ¼ cup brown sugar, eggs, salt, cinnamon, and vanilla extract. Then whisk till you combine. Then add your whole milk and whisk till combined.

  3. Cut your croissants in half and then put them into the baking tray.

  4. Add custard to the tray trying to spread it evenly across the whole dish.

  5. Let it rest for twenty minutes in the fridge covered or overnight preferably.

  6. When ready to bake, bake at 350 degrees for 30 minutes covered and then 15 minutes uncovered. 

  7. Take it out and let it rest for 10 minutes. Put your strawberries and or blueberries in a bowl and add 3 tbsp of sugar and mix and let sit. Then you can make your whipped cream by just adding a tsp of vanilla extract and 3 tbsp of sugar to the cream. Then just whip it till it gets stiff peaks. Sift your powdered sugar on top of the bread pudding for a luxurious sight.

  8. After 10 minutes cut into pieces and serve with berries and whipped cream! Now to have the time of your life.


Background info: Bread pudding is amazing. But what is even better is bread pudding what croissants. Add a brown sugar caramel to do the bottom and you are bound to have crack in a baking dish. This dish doubles as a lovely and decadent dessert and even a breakfast item to have in the morning. The first time I did make this was indeed for a brunch with my friends. The whole thing was devoured in less than twenty minutes. This bread pudding is a wonderful addition to anyone’s dessert arsenal.
