Ultimate S’mores Cookies

Ingredients:
2 sticks unsalted butter (8 oz / 227g), browned OR Softned
2.5 cups all-purpose flour (9.2 oz / 260g)
2 teaspoons salt (0.22 oz / 6g)
1 tspn baking soda (0.21 oz / 6g)
3/4 cup packed dark brown sugar (5.3 oz / 150g)
3/4 cup granulated sugar (5.3 oz / 150g)
2 large eggs (3.5 oz / 100g), cold from the refrigerator
1 tablespoon vanilla extract
10 ounces of chocolate bars diced or you can just use chocolate chips
Graham crackers, for assembly
Marshmallows, for assembly
Chocolate for assembly
Method
Prep the Ingredients: In a medium bowl, combine the all-purpose flour, kosher salt, and baking soda. Set aside. You can also brown the butter at this stage and set aside in the fridge till firmed up. Once ready to assemble make the butter so it is soft. I put mine in the microwave for 5 seconds ar a time checking on it.
In a large mixing bowl, add your two types of sugar. The brown sugar gives these cookies a chewy texture, while the white sugar adds that nice crisp.
Add the softened browned butter (or regular softened butter if preferred). Use a whisk or a mixer to combine until the mixture is smooth and creamy. Make sure it is homogenous
Add your Wet Ingredients by cracking 2 large eggs, one at a time, mixing well after each addition. Then Pour in 1 tablespoon vanilla extract and mix until everything is well combined.
Gradually add the flour mixture to the wet ingredients, folding it in with a spatula until just combined.
Fold in your chocolate, either your diced chocolate bars or chocolate chips
Assemble the S’mores Cookies:
Take a graham cracker and place it on a baking sheet.
Add a piece of chocolate on top of the graham cracker, followed by a marshmallow.
Take a portion of your cookie dough and carefully wrap it around the graham cracker, chocolate, and marshmallow. The graham cracker should be on the bottom. You may need to wet your hands slightly to prevent the dough from sticking.
.Bake the assembled cookies for about 15 minutes, or until the edges are slightly golden. Allow the cookies to cool on the baking sheet for 10-15 minutes before serving. Pour yourself a glass of milk and enjoy these ultimate chocolate chip s’mores cookies!
