Cardamom Brioche Cinnamon Rolls

INGREDIENTS
For Dough
4 cups of flour
1/2 cup sugar
1 packet of instant yeast
1 cup lukewarm warm
10 tbsp of softened unsalted butter (6 for dough 4 for spreading)
2 eggs and one yolk
FOR CINNAMON CARDAMOM SUGAR
3/4 cup brown sugar
1 tbsp cardamom
2 tbsp of cinnamon
For Frosting
4 oz of softened cream cheese
1/2 cup powdered sugar
1 tsp of vanilla extract
1 tsp of salt
2-4 tbsp of milk
METHOD:
I’m going to use a stand mixer for this but you do not need one you can just knead and give yourself a lil forearm workout. I will add flour into a big bowl with sugar and salt. Give it a quick whisk and then add your 6 tbsps of softened butter and mix till evenly dispersed in flour, don’t be shy you can use your hands.
Once nicely incorporated I’m going to add a full packet of instant yeast into my milk and mix it up. Then slowly add it to my dough with the stand mixer running on medium. After that, I’m going to add my eggs while the mixer is still running. Mix till a dough forms, around 3 to 5 minutes. I’m going to transfer it to a greased bowl cover it and put it in a warm place till doubled in size.
After about an hour it turned into a REAL BIG BOY. I’m going to add it to a floured work surface. I’m going to roll it out till it is a nice rectangle and the dough is a quarter inch thick. If you don’t have a rolling pin just use a clean water bottle to roll it out. Once rolled, add 4 tbsp of softened butter all across the dough. Then add your cinnamon cardamom sugar. Add it liberally to your dough and spread it edge to edge and then roll it up nice carefully. Then you’re going to cut 2-inch rolls with some floss or a serrated nice. I like doing it with the floss because it’s satisfying.
Put them into a greased baking dish and you can put them in the fridge and bake them the next morning or wait till they doubled in size to bake them. I baked it the next morning so I took it out waited til they were room temperature and then baked it. It took about an hour. I baked at 375 for 20-25 minutes till golden brown. Once they are done I’m going to make the frosting by adding softened cream cheese, powdered sugar, vanilla extract, salt, and then 2-4 tbsp of milk depending on how loose you like it.
Lather up liberally and make them look sexy. Eat a regrettable amount, and then take an afternoon nap. Enjoy
