Brown Sugar Sauce Bread Pudding

Ingredients:
2 loaves of bread of your choice (I used Hawaiian rolls and challah)
3/4 cup sugar
1/2 tsp salt
1 tsp cinnamon
2 cups milk
1 Tbsp vanilla extract
2 eggs 1 egg yolk
1/2 cup cold heavy cream
Some heavy cream for topping (optional)
Turbinado Sugar/Raw Sugar, Pistachios, Chocolate Chips, Pistachios, Raisans for topping (optional)
Powdered sugar for topping (optional)
Ice cream (optional but highly recommended)
For Brown Sugar Sauce
2 tablespoons butter unsalted
2 tablespoons flour
1/2 cup brown sugar packed
2 tsp of Cardamom
2 cups whole milk
1 tsp vanilla extract
1 pinch salt plus more to taste
Method
Cut your bread into 1-inch pieces; if it is not stale, you can optionally toast it to absorb more custard. I toasted mine on a sheet tray at 400 degrees for about 4 minutes
Grease up a baking dish with butter well and shove your cubed bread inside the baking dish
Combine sugar, milk, cinnamon, salt, and vanilla extract in a small pot on the stove. Put it on medium and heat whisk till everything is dissolved. Once dissolved take off the heat and let cool for about 5- 10 minutes
Crack eggs into a separate bowl and whisk the eggs together. Then add the egg mixture to the bowl and mix well.
Pour bread custard into the baking dish to ensure it is evenly distributed.
Let sit for 20 minutes minimum or you can put in the fridge and bake it tomorrow or whenever you want!
Bake at 350 F for 30-35 minutes
While it is baking you can make the Brown Sugar Sauce. Add your butter into a pan and melt it until it is bubbling add your flour and mix till it is combined and a little browned
Slowly add your milk and whisk vigorously. Then add brown sugar, vanilla, cardamom, and salt and whisk till everything is combined. The mixture should be thick like gravy.
Take the pudding out when the top is golden brown and a skewer comes clean out when you poke the middle of the pudding. I add some powdered sugar on top. Cut generous portions of the pudding add the sauce and ice cream and gain some weight!
